Iran has long been a neighbor of the former Soviet Union, as well as Afghanistan, Pakistan, the Arab world, and Turkey. It has also had close relations with Europe, the Far East and Africa due to its location on the Silk Road trade route. Therefore, looking at the position of Iran on the map, one can understand why the range of its indigenous foods is so wide. We are going to introduce a very popular type of Iranian food and examine its ingredients.

Chelokbab

Undoubtedly, chelokbab is one of the most famous Iranian dishes and many people in the world know Iranian cuisine and food with chelokbab. There are different types of Iranian kebabs, among that we can mention Bakhtiari kebab, Soltani kebab and Chanjeh kebab. Kobideh is probably the most well-known member of the kebab family and is very popular among Iranians and tourists. As you know, kebabs are usually served with tomatoes, peppers, vegetables, saffron rice, buttermilk, fresh bread, fresh lemons and onions.

Most likely, the recipe for cooking chelokbab has reached our land either by the people of the Caucasus or by the Iranians who visited this region. According to the writings of Mirza Mohammad Reza Motamed al-Kitab, the author of the Qajar period, Nasser al-Din Shah himself asked the Caucasians to order him to prepare kebabs. From then on, the recipe for kebabs gradually spread to all parts of Iran, and the Iranians learned how to prepare it. Ingredients: beef order, lamb chops, medium tomatoes, brewed saffron, enough salt, onion, sumac and black pepper

Fesenjan stew

This symbolic stew is usually prepared with sour pomegranate and chicken, red meat or duck and served with rice. The main source of Fesenjan stew is related to northern Iran and Gilan province. Walnuts and pomegranate paste are the main base of this food. Some people like Fesenjan sour and some like it smooth. Therefore, the method of preparing Fesenjan can change slightly in different places and depending on the taste of the people in each region. Archaeologists have unearthed stone tablets and inscriptions from the ruins of Persepolis, the ancient ritual capital of the Persian Empire, dating to 515 BC, which contain the ingredients of Fesenjan stew, including pomegranate, chicken, and walnuts.

Ingredients: Nuts, walnuts, chicken, pomegranate paste, onion, sugar, melted saffron, liquid oil, salt, turmeric and black pepper

There are different types of Iranian food and except for the famous and popular dishes that are prepared all over Iran, every city and region has its own local and special food. Some of our traditional dishes are better known in the world and this makes many tourists eager to travel to Iran and taste the unique taste of Iranian food.
