ASH RESHTEH

Ash reshteh is one of the most famous Iranian dishes. This soup is often eaten with curd and sometimes with vinegar and even pickles.  Depending on family habits, this food is used as an appetizer or main meal. Also sometimes at winter parties or in Muslim Iftar ceremonies during Ramadan, ash is used as an appetizer

Ingredients

beans, Lentils, Pea, Hot mint, Garlic, Ash string ,Vegetable soup, including spinach, leeks, parsley and coriander, onion, Oil, salt and turmeric.

Recipe

Put the water in a bowl large enough to boil, and then add the beans, beans, lentils and peas.  In another bowl, fry the chopped onions in oil, salt and turmeric.  After the contents of the dish, including water and beans, are boiled, add the vegetables to it and wait for it to boil for 20 minutes so that it does not taste raw. After this time, we add the string to the dish. After five minutes, add hot onion. Chop the garlic and fry it in a little oil and add a very small amount of turmeric until it turns golden. Hot garlic, hot onion and curd are used to decorate the soup.

It lowers the body’s cholesterol levels, which acts as a shield against heart disease. It regulates blood sugar levels. It is very useful in fighting cancers, controlling body weight, reducing the risk of kidney disease and reducing the risk of kidney stones.

kashke bademjan (curd and eggplant )is the name of an Iranian dish that consists of curd, eggplant and several other additives. This food is usually eaten with bread.

Ingredients

Eggplant,Ground curd,Chopped onion,Oil, Salt, Garlic, Dried mint, Saffron andChopped onion

Peel the eggplant and sprinkle with salt, and after an hour of bitterness, wash with cold water. Fry eggplant in oil over low heat. Remove the eggplant from the pan.  Fry the onion and garlic in the remaining oil. Add turmeric and dry mint and fry. Return the eggplant to the pan.  Add a little water and let it cook on low heat for half an hour. When serving, decorate the food with walnuts, curd, onion and garlic

House decoration:

You can use this type of decoration with diluted curd, diluted mixture of curd and saffron, grated walnuts, hot onion, hot mint and hot garlic and decorate this popular food very diverse and stylish.

Garnish with eggplant skin:

This method is more creative. You can decorate your eggplant curd with an idea and with the least facilities. To do this, peel the eggplants thinly and twist them to form a rose, and then fix them with a toothpick. Other shapes can also be used for decoration.

Simple decoration:

If you do not have the time and facilities for professional decorations, you can decorate eggplant curd with the help of a little hot onion and curd.
