Kalam polo (Cabbage and rice pilaf with meatballs) is one of the delicious and authentic Shiraz dishes.  Kalam polo can be prepared with a variety of cabbage in most cities also it is one of the most delicious dishes that you can prepare and serve for your ceremonies and parties.

Ingredients

4 cups rice,1 large onion,Cabbage pilaf vegetables 500 g,1 medium white cabbage, Minced meat 300 grams,Enough sour lemon juice,Chickpea flour 2 tbsp ,Enough salt, black pepper and turmeric.

To cook this dish, first chop the cabbage and fry it. If we use other types of cabbage, cut it into slices and put it in oil, turmeric and some lemon juice to make it soft and flavorful. If we use white cabbage, we fry the cabbage in small pieces in oil to soften it. Then make the rice, oil the bottom of the pot and then put a few lettuce leaves in the bottom of the pot, add the rice, cabbage and vegetables. Pour layer by layer in the pot and so-called DAM rice. Spices, turmeric and saffron are used in this food. These pilafs usually consist of small meatballs consisting of (minced meat and chickpea flour and grated onion without water, which are fried into small balls).

This mourning is very popular in Fars province and southern Iran. If you are looking for the most delicious cabbage pilaf, it is better to go to restaurants in Shiraz. This dish is usually served with mixed pickles and lychee pickles. But the main complement of this food is Shirazi salad. Shirazi salad is usually made from a variety of vegetables such as tomatoes, cucumbers, onions with dried mint, salt, pepper and fresh lemon juice.
